The rhythm
One seating. About three hours.
The seating begins when the table is complete and knows only one speed: the fire's. Count on three hours, sometimes a little more, never less. You do not hurry an ember — and no one is waiting for your table after you.

The sommelier proposes one pairing per act, with wine or without alcohol, decided that very morning with the chef. Nothing is compulsory: the house water carries the menu with equal dignity.
